  1. 1. Chop the chocolate into small pieces.
  2. 2. Melt the chocolate pieces in a double boiler.
  3. 3. Beat the butter and apple puree until creamy.
  4. 4. Separate the eggs so you have distinct yolks and whites.
  5. 5. Stir the egg yolks into the butter mixture one by one.
  6. 6. Stir the melted chocolate into the butter-yolk mixture.
  7. 7. Mix the flour with the baking powder and almonds.
  8. 8. Gently fold the flour mixture into the batter.
  9. 9. Beat the egg whites with the sugar until stiff.
  10. 10. Gently fold the egg whites into the batter.
  11. 11. Pour the batter into a greased baking pan.
  12. 12. Preheat the oven to 180 °C (convection 160 °C; gas mark 2–3).
  13. 13. Bake the cake in the oven for about 1 hour.
  14. 14. Take the cake out of the oven.
  15. 15. Let the cake cool down.
  16. 16. Carefully release the cake from the pan.
