🍰 Simple Chocolate Cake

Ingredients
- 200 g dark chocolate (at least 70% cocoa content)
- 200 g soft butter
- 150 g applesauce (no sugar)
- 8 eggs
- 150 g whole wheat flour
- 2 tsp baking powder
- 50 g finely ground almond kernels
- 100 g raw cane sugar
Instructions
- 1. Chop the chocolate into small pieces.
- 2. Melt the chocolate pieces in a double boiler.
- 3. Beat the butter and apple puree until creamy.
- 4. Separate the eggs so you have distinct yolks and whites.
- 5. Stir the egg yolks into the butter mixture one by one.
- 6. Stir the melted chocolate into the butter-yolk mixture.
- 7. Mix the flour with the baking powder and almonds.
- 8. Gently fold the flour mixture into the batter.
- 9. Beat the egg whites with the sugar until stiff.
- 10. Gently fold the egg whites into the batter.
- 11. Pour the batter into a greased baking pan.
- 12. Preheat the oven to 180 °C (convection 160 °C; gas mark 2–3).
- 13. Bake the cake in the oven for about 1 hour.
- 14. Take the cake out of the oven.
- 15. Let the cake cool down.
- 16. Carefully release the cake from the pan.
