🍽️ Crispy Roast Duck with Apple and Cinnamon Filling

Ingredients
- 1 duck (2 kg, ready for kitchen)
- salt
- pepper (from the mill)
- 4 small apples
- 40 g butter
- 0.25 tsp cinnamon
- 1 vanilla pod
Instructions
- 1. Rinse the duck thoroughly under running water.
- 2. Pat the duck dry inside and out with kitchen paper.
- 3. Rub the entire duck inside and out generously with salt and pepper.
- 4. Peel the apple and cut it into four quarters.
- 5. Remove the core from the apple quarters.
- 6. Heat 20 grams of butter in a large pan or roasting dish.
- 7. Add the apple pieces to the hot butter.
- 8. Fry the apples on both sides until golden brown over high heat.
- 9. Sprinkle cinnamon over the fried apples.
- 10. Season the apples lightly with a pinch of salt and pepper.
- 11. Fill the seasoned apples into the cavity of the duck.
- 12. Close the opening of the duck with wooden skewers.
- 13. Slice a vanilla pod lengthwise.
- 14. Scrape out the vanilla seeds with a knife.
- 15. Mix the vanilla seeds thoroughly with the remaining butter.
- 16. Spread the vanilla butter mixture evenly over the entire outside of the duck using a spatula.
- 17. Place the duck breast-side down in a roasting pan.
- 18. Pour about 150 milliliters of water into the roasting pan.
- 19. Roast the duck in the preheated oven at 160 degrees Celsius for about 30 minutes.
- 20. After 30 minutes, turn the duck over so the breast side is facing up.
- 21. Increase the oven temperature to 250 degrees Celsius.
- 22. Roast the duck at 250 degrees Celsius for another 30 minutes.
- 23. Baste the duck several times with the pan juices during the roasting time.
- 24. Take the finished duck out of the roasting pan.
- 25. Remove the apple filling from inside the duck.
- 26. Place the duck on a serving platter.
- 27. Serve the apple filling alongside or inside the duck.
