🍰 Light apple cake with ground pistachios

Ingredients
- 250 g Wheat flour Type 1050
- 125 g room-temperature Butter
- 0.5 tsp Vanilla powder
- 1 pinch Salt
- 3 tsp Baking powder
- 3 Eggs
- 80 g Coconut blossom sugar
- 2 tbsp Maple syrup
- 2 tbsp Milk
- 4 tart Apples (e.g. Boskop, Braeburn)
- 3 tbsp ground Pistachios
Instructions
- 1. Beat butter, vanilla powder and coconut blossom sugar until creamy. Add maple syrup, eggs and salt and beat until white and fluffy. Gradually stir in flour and baking powder. Add milk and mix into a soft batter. If the batter is too thick, add another 2–3 tablespoons of milk.
- 2. Grease a springform pan if necessary and spread the batter into it.
- 3. Peel the apples, halve them and remove the core. Score the apple halves several times so they stay together.
- 4. Place the apple halves on the batter. Bake the cake in the preheated oven at 200 °C (convection: 180 °C; gas: setting 3) for 35–40 minutes until golden brown. Decoratively arrange the pistachios around the edge. Serve the cake well cooled.
