🍽️ Quick Tomato and Onion Soup

Ingredients
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- 800 g chopped tomatoes from the can (2 cans of 400 g each)
- salt
- pepper (from the mill)
- nutmeg
- 0.5 tsp whole cane sugar
- 10 basil leaves
Instructions
- 1. Peel the onion and cut it into small cubes.
- 2. Peel the garlic.
- 3. Heat the olive oil in a pot.
- 4. Sauté the onion cubes in the hot oil until they are soft and translucent.
- 5. Deglaze the onions with the tomatoes.
- 6. Add the garlic to the mixture.
- 7. Season the soup with cane sugar, salt, pepper, and freshly grated nutmeg.
- 8. Bring the soup to a brief boil.
- 9. Reduce the heat and cover the pot.
- 10. Let the soup simmer for 10 minutes.
- 11. Remove the pot from the heat.
- 12. Adjust the seasoning with salt and pepper.
- 13. Stir in the basil leaves.
- 14. Let the soup steep, covered.
