🥤 Simple Cocktail Sauce

Ingredients
- 2 fresh egg yolks
- 1 pinch salt
- 1 tsp mustard
- 1 lemon (juice)
- 250 ml olive oil
- 20 ml cognac
- 4 tbsp ketchup
- cayenne pepper
Instructions
- 1. Make sure all ingredients for the mayonnaise are at room temperature.
- 2. Vigorously whisk the egg yolks with a pinch of salt, mustard, and one tablespoon of lemon juice.
- 3. Add a few drops of oil and beat it in using a whisk or the beaters of a hand mixer.
- 4. Slowly pour in the rest of the oil in a thin stream while continuing to whisk.
- 5. Ensure the oil is immediately bound by the egg yolk to form a thick, creamy mayonnaise.
- 6. Stir the cognac and ketchup into the finished mayonnaise.
- 7. Season the sauce to taste with salt and cayenne pepper.
