  2. 2. Vigorously whisk the egg yolks with a pinch of salt, mustard, and one tablespoon of lemon juice.
  3. 3. Add a few drops of oil and beat it in using a whisk or the beaters of a hand mixer.
  4. 4. Slowly pour in the rest of the oil in a thin stream while continuing to whisk.
  5. 5. Ensure the oil is immediately bound by the egg yolk to form a thick, creamy mayonnaise.
  6. 6. Stir the cognac and ketchup into the finished mayonnaise.
  7. 7. Season the sauce to taste with salt and cayenne pepper.
