Ingredients
- 8 eggs
- 1 bunch spring onions
- salt
- pepper (from the mill)
- 5 tbsp olive oil
- 3 tbsp apple cider vinegar
Instructions
- 1. Peel the hard-boiled eggs.
- 2. Cut the peeled eggs into four equal pieces.
- 3. Remove the dry ends of the spring onions.
- 4. Rinse the spring onions under running water.
- 5. Slice the spring onions into thin rings.
- 6. Put the oil, apple cider vinegar, salt, and pepper into a small bowl.
- 7. Whisk the ingredients vigorously until a vinaigrette (an acid-based sauce) has formed.
- 8. Place the egg pieces on small plates.
- 9. Distribute the spring onion rings over the eggs.
- 10. Pour the vinaigrette evenly over the salad.
- 11. Sprinkle the salad with a little more pepper if desired.
- 12. Serve the salad with fresh white bread.
