🍽️ Chinese-style egg noodles with mixed vegetables

Ingredients
- 400 g Asian egg noodles
- salt
- 300 g beef fillet
- 150 g broccoli
- 50 g bean sprouts
- 1 carrot
- 1 red chili pepper
- 1 spring onion
- 1 red bell pepper
- 50 g snow peas
- 100 g asparagus
- 1 small zucchini
- 1 clove garlic
- 4 tbsp sesame oil
- 4 tbsp soy sauce
- 1 tbsp palm sugar
- 3 tbsp unsalted peanuts
Instructions
- 1. Cook the noodles according to the package instructions.
- 2. Drain the noodles.
- 3. Rinse the noodles with cold water to stop the cooking process.
- 4. Let the noodles drain well.
- 5. Rinse the meat under cold water.
- 6. Pat the meat dry with a kitchen towel.
- 7. Cut the meat into thin strips.
- 8. Clean the broccoli.
- 9. Wash the broccoli.
- 10. Divide the broccoli into small florets.
- 11. Bring salted water to a boil.
- 12. Blanch the broccoli florets for 1 to 2 minutes in the boiling water (briefly cook in boiling water).
- 13. Remove the broccoli florets from the water.
- 14. Rinse the broccoli florets with cold water.
- 15. Let the broccoli florets drain.
- 16. Rinse the bean sprouts under cold water.
- 17. Let the bean sprouts drain well.
- 18. Peel the carrot.
- 19. Slice the carrot thinly.
- 20. Wash the bell pepper.
- 21. Remove the seeds from the bell pepper.
- 22. Cut the bell pepper into thin strips.
- 23. Heat 3 tablespoons of oil in a wok.
- 24. Fry the meat briefly and vigorously.
- 25. Chop the white parts of the spring onions.
- 26. Add the chopped white parts of the spring onions to the meat.
- 27. Add the garlic.
- 28. Continue frying everything for about 1 to 2 minutes.
- 29. Add the broccoli.
- 30. Add the carrots.

- 40. Season everything with soy sauce.
- 41. Season everything with palm sugar.
- 42. Heat 1 tablespoon of oil in a second pan.
- 43. Fry the noodles quickly.
- 44. Arrange the vegetables with the meat on top of the noodles.
- 45. Sprinkle the dish with chili rings.
- 46. Sprinkle the dish with peanuts.
- 47. Serve the dish.
