🍰 Fluffy Spelt Pancakes with Fresh Blueberries

Ingredients
- 200 g spelt flour
- 350 ml milk (3.5% fat)
- 1 pinch salt
- 1 tbsp baking powder (5 g each)
- 2 tbsp liquid honey (30 g each)
- 2 eggs
- 200 g blueberries
- 10 g butter
- 10 g powdered sugar (from cane sugar)
Instructions
- 1. Whisk the spelt flour with the milk, salt, baking powder, and honey until you have a smooth batter. Stir in the eggs and let the batter rest for 30 minutes. Wash and dry the blueberries and gently fold them into the batter.
- 2. Heat the butter in a pan. Add one tablespoon of batter at a time and cook the pancakes over medium heat for 1 to 2 minutes per side until golden brown. Remove the finished pancakes and keep them warm while you cook the remaining batter in portions.
- 3. Dust the finished pancakes with powdered sugar to taste and serve.
