🍽️ Creamy Egg Yolk Sauce

Ingredients
- 3 hard-boiled eggs
- 1 tsp mustard
- salt
- pepper (from the mill)
- 1 pinch cayenne pepper
- 3 tbsp lemon juice
- 100 ml salad oil
- 2 tbsp chive rings
- 2 tbsp tomato cubes (without seeds)
Instructions
- 1. Peel the eggs, separate the yolks from the whites, and grate the yolks finely into a bowl. Mix well with the mustard, salt, pepper, cayenne pepper, and lemon juice.
- 2. Finely chop the egg whites.
- 3. Gradually whisk the oil into the yolk mixture with a whisk until the sauce becomes creamy. Then gently fold in the chive rings, chopped egg whites, and diced tomatoes.
- 4. Caper variation: Replace the chives and tomatoes with 1 tablespoon of small capers and 1 tablespoon of finely chopped pickles.
