🍽️ Fine Onion Sauce

Ingredients
- 4 shallots
- 3 tbsp butter
- 3 tbsp spelt whole wheat flour
- 100 ml light grape juice
- 400 ml vegetable stock
- 100 ml whipping cream
- salt
- pepper (from the mill)
- nutmeg (freshly grated)
- 1.5 tbsp freshly chopped parsley
Instructions
- 1. Peel the shallots and cut them into very small cubes.
- 2. Melt the butter in a pot. Sauté the shallots until translucent, sprinkle with flour and stir briefly. Then pour in the grape juice and vegetable stock. Simmer the mixture over medium heat for about 5 minutes.
- 3. Now pour in the cream and simmer for another 5 minutes. Season the sauce with salt, pepper, and a pinch of nutmeg. Serve garnished with parsley.
