  5. 5. Add the remaining rye flour, 350 milliliters of water, malt flakes, and half a teaspoon of salt to the bowl.

  7. 7. Cover the bowl.
  8. 8. Let the soak mixture rest for 30 minutes.
  9. 9. Take a small bowl for the yeast mixture.
  10. 10. Mix 115 milliliters of water with yeast and the remaining salt.
  11. 11. Add the yeast mixture to the soak.
  12. 12. Add wheat flour, malt powder, and the pre-ferment to the soak.
  13. 13. Knead the ingredients for 10 minutes into a smooth dough.

  15. 15. Let the dough rise for 45 minutes.
