Ingredients
- 400 g rye wholemeal flour
- 20 g rye sourdough starter (rye mother dough)
- 150 g rye malt (malt flakes)
- 13 g salt
- 0.2 cube yeast (8 g)
- 400 g wheat flour Type 1050
- 2 tbsp wheat flour Type 1050 (for working)
- 20 g rye malt powder or baking malt
Instructions
- 1. Put 200 grams of rye flour, sourdough starter, and 200 milliliters of water into a bowl.
- 2. Stir the ingredients for the pre-ferment well.
- 3. Let the pre-ferment mixture swell overnight at room temperature.
- 4. Take a large bowl for the soak.
- 5. Add the remaining rye flour, 350 milliliters of water, malt flakes, and half a teaspoon of salt to the bowl.
- 6. Mix the ingredients for the soak.
- 7. Cover the bowl.
- 8. Let the soak mixture rest for 30 minutes.
- 9. Take a small bowl for the yeast mixture.
- 10. Mix 115 milliliters of water with yeast and the remaining salt.
- 11. Add the yeast mixture to the soak.
- 12. Add wheat flour, malt powder, and the pre-ferment to the soak.
- 13. Knead the ingredients for 10 minutes into a smooth dough.
- 14. Cover the dough.
- 15. Let the dough rise for 45 minutes.
- 16. Lightly dust a work surface with flour.
- 17. Take the dough onto the work surface.
- 18. Knead the dough again.
- 19. Cover the dough again.
- 20. Let the dough rise for another 1 hour.
- 21. Divide the dough into 3 equal portions.
- 22. Shape each portion into an elongated strand.
- 23. Dust the dough pieces with flour.
- 24. Place the dough pieces in a 3-slot baguette baking tray.
- 25. Cover the dough pieces.
- 26. Let the dough pieces rest for 30 minutes.
- 27. Preheat the oven to 230 degrees Celsius.
- 28. Set the convection to 210 degrees Celsius.
- 29. Set the gas oven to setting 3 to 4.
- 30. Place a fat pan in the oven.
- 31. Put the baguettes in the preheated oven.
- 32. Bake the baguettes for 10 minutes.
- 33. Pour 1 cup of water into the hot fat pan.
- 34. Close the oven door immediately.
- 35. Reduce the oven temperature to 200 degrees Celsius.
- 36. Set the convection to 180 degrees Celsius.
- 37. Set the gas oven to setting 3.
- 38. Bake the baguettes for another 30 to 35 minutes.
