  1. 1. Rinse the chicken drumsticks under running water.
  2. 2. Thoroughly dry the meat with a kitchen towel.
  3. 3. Season the drumsticks generously with salt and pepper on all sides.
  4. 4. Wash the potatoes thoroughly.
  5. 5. Cut the potatoes in half lengthwise.
  6. 6. Peel the onion and the garlic clove.
  7. 7. Dice the onion and garlic into small cubes.
  8. 8. Wash the tomatoes.
  9. 9. Remove the hard core from the top of the tomatoes.
  10. 10. Finely chop the tomatoes.
  11. 11. Rinse the white beans in a sieve.
  12. 12. Let the beans drain well in the sieve.
  13. 13. Wash the lemon under hot water.
  14. 14. Dry the lemon.
  15. 15. Grate some lemon zest.
  16. 16. Squeeze the juice from the lemon.
  17. 17. Place the chopped tomatoes in a bowl.
  18. 18. Add the drained beans to the bowl.
  19. 19. Add the diced onion to the bowl.
  20. 20. Add the diced garlic.
  21. 21. Season the vegetable mixture with salt and pepper.
  22. 22. Preheat the oven to 200 °C (180 °C with fan or gas mark 3).
  23. 23. Transfer the seasoned vegetable mixture into a large baking dish.
  24. 24. Place the potato halves on top of the vegetables.
  25. 25. Pour the vegetable broth over everything.
  26. 26. Pour the lemon juice over it.
  27. 27. Place the seasoned chicken drumsticks on top of the potatoes.
  28. 28. Place the dish in the preheated oven.
  29. 29. Bake the dish for 40 to 45 minutes.
  30. 30. Remove the dish from the oven briefly.
  31. 31. Add the spinach to the dish.
  32. 32. Stir everything well to distribute the spinach.
  33. 33. Place the dish back in the oven.
  34. 34. Finish baking the dish for another 10 minutes.
  35. 35. Check the potatoes for doneness with a fork.
  36. 36. Wash the parsley.
  37. 37. Shake the parsley dry.
  38. 38. Chop the parsley leaves roughly.
  39. 39. Sprinkle the lemon zest over the finished dish.
  40. 40. Sprinkle the chopped parsley over it.
  41. 41. Serve the chicken drumsticks directly from the baking dish.
