🍽️ Crispy chicken drumsticks with tomato and white bean vegetable medley

Ingredients
- 1200 g chicken drumsticks (Drumsticks; 100 g each)
- salt
- pepper
- 600 g small waxy potatoes
- 1 onion
- 4 garlic cloves
- 5 tomatoes
- 400 g white beans (can; drained weight)
- 1 organic lemon
- 300 ml vegetable broth
- 150 g spinach (frozen; thawed)
- 10 g parsley (0.5 bunch)
Instructions
- 1. Rinse the chicken drumsticks under running water.
- 2. Thoroughly dry the meat with a kitchen towel.
- 3. Season the drumsticks generously with salt and pepper on all sides.
- 4. Wash the potatoes thoroughly.
- 5. Cut the potatoes in half lengthwise.
- 6. Peel the onion and the garlic clove.
- 7. Dice the onion and garlic into small cubes.
- 8. Wash the tomatoes.
- 9. Remove the hard core from the top of the tomatoes.
- 10. Finely chop the tomatoes.
- 11. Rinse the white beans in a sieve.
- 12. Let the beans drain well in the sieve.
- 13. Wash the lemon under hot water.
- 14. Dry the lemon.
- 15. Grate some lemon zest.
- 16. Squeeze the juice from the lemon.
- 17. Place the chopped tomatoes in a bowl.
- 18. Add the drained beans to the bowl.
- 19. Add the diced onion to the bowl.
- 20. Add the diced garlic.
- 21. Season the vegetable mixture with salt and pepper.
- 22. Preheat the oven to 200 °C (180 °C with fan or gas mark 3).
- 23. Transfer the seasoned vegetable mixture into a large baking dish.
- 24. Place the potato halves on top of the vegetables.
- 25. Pour the vegetable broth over everything.
- 26. Pour the lemon juice over it.
- 27. Place the seasoned chicken drumsticks on top of the potatoes.
- 28. Place the dish in the preheated oven.
- 29. Bake the dish for 40 to 45 minutes.
- 30. Remove the dish from the oven briefly.
- 31. Add the spinach to the dish.
- 32. Stir everything well to distribute the spinach.
- 33. Place the dish back in the oven.
- 34. Finish baking the dish for another 10 minutes.
- 35. Check the potatoes for doneness with a fork.
- 36. Wash the parsley.
- 37. Shake the parsley dry.
- 38. Chop the parsley leaves roughly.
- 39. Sprinkle the lemon zest over the finished dish.
- 40. Sprinkle the chopped parsley over it.
- 41. Serve the chicken drumsticks directly from the baking dish.
