🍽️ Creamy Roquefort Cheese Dressing

Ingredients
- 1 egg yolk
- 1 tbsp lemon juice
- 125 ml sunflower oil
- 4 tbsp yogurt
- salt
- pepper (from the mill)
- 100 g Roquefort
- whipping cream (to finish)
Instructions
- 1. Whisk the egg yolk with the lemon juice. Slowly add the oil drop by drop while whisking constantly with a wire whisk. Continue whisking until a smooth, creamy emulsion forms. Finally, stir in the yogurt and season the dressing with salt and pepper.
- 2. Crumble the Roquefort cheese finely using a fork. Mix the crumbled cheese thoroughly with the prepared mayonnaise. Finally, enrich the dressing with the cream.
