🍽️ Red Beet Dressing

Ingredients
- 2 beetroot (ca. 250 g)
- 100 ml vegetable broth
- 1 tbsp lemon juice
- 1 pinch sugar
- 1 tbsp freshly chopped dill
- 2 tbsp vegetable oil
- salt
- pepper (from the mill)
Instructions
- 1. Wash the red beet thoroughly. Steam it for about 30 minutes until tender. Rinse it briefly with cold water to stop the cooking process. Peel off the skin and let it cool down completely.
- 2. Cut the red beet into coarse cubes. Puree it together with the broth and sugar until smooth. Stir in the dill. Slowly pour in the oil while stirring constantly. Finally, season the dressing to taste with salt and pepper.
