  1. 1. Mix the honey with 350 milliliters of water and the lemon juice.
  2. 2. Bring the mixture to a boil.
  3. 3. Let it simmer gently for a few minutes until the honey has completely dissolved.
  4. 4. Remove from heat.
  5. 5. Let the liquid cool down completely.
  6. 6. Cut the watermelon flesh into pieces.
  7. 7. Blend it until smooth.
  8. 8. Stir in just under three-quarters of the cooled honey syrup into the melon mixture.
  9. 9. Fill the mixture into the popsicle molds.
  10. 10. Place them in the freezer for about two hours.
  11. 11. After one hour, insert the popsicle sticks into the semi-frozen mixture.
  12. 12. Mix the yogurt with the grated lemon zest.
  13. 13. Add three to four tablespoons of the honey syrup.
  14. 14. Carefully pour this cream over the frozen melon layer.
  15. 15. Return the molds to the freezer for another hour.
  16. 16. Blend the net melon flesh finely together with the lime juice.
  17. 17. Add the remaining honey syrup.
  18. 18. Fill the molds to the top with this mixture.
  19. 19. Freeze them completely for at least two more hours.
