🍽️ Three-Colored Melon Popsicles

Ingredients
- 100 g Honey
- 1 untreated Lemon (juice and zest)
- 500 g Watermelon flesh
- 200 g Yogurt (3.5% fat)
- 150 g Cantaloupe flesh (green)
- 1 Lime (juice)
Instructions
- 1. Mix the honey with 350 milliliters of water and the lemon juice.
- 2. Bring the mixture to a boil.
- 3. Let it simmer gently for a few minutes until the honey has completely dissolved.
- 4. Remove from heat.
- 5. Let the liquid cool down completely.
- 6. Cut the watermelon flesh into pieces.
- 7. Blend it until smooth.
- 8. Stir in just under three-quarters of the cooled honey syrup into the melon mixture.
- 9. Fill the mixture into the popsicle molds.
- 10. Place them in the freezer for about two hours.
- 11. After one hour, insert the popsicle sticks into the semi-frozen mixture.
- 12. Mix the yogurt with the grated lemon zest.
- 13. Add three to four tablespoons of the honey syrup.
- 14. Carefully pour this cream over the frozen melon layer.
- 15. Return the molds to the freezer for another hour.
- 16. Blend the net melon flesh finely together with the lime juice.
- 17. Add the remaining honey syrup.
- 18. Fill the molds to the top with this mixture.
- 19. Freeze them completely for at least two more hours.
