  1. 1. Make a small cross-shaped cut into the apricots.
  2. 2. Pour boiling water over the apricots for one minute.
  3. 3. Cool the apricots down under cold water.
  4. 4. Peel the skin off the apricots.
  5. 5. Halve the apricots and remove the stones.
  6. 6. Wash the strawberries and remove the green leafy tops.
  7. 7. Peel the kiwis.
  8. 8. Dice all fruits into small cubes.
  9. 9. Place the fruits in a pot.
  10. 10. Briefly puree the fruits with a hand blender until roughly chopped.
  11. 11. Stir the jam sugar into the fruits.
  12. 12. Wash the lemon.
  13. 13. Peel the lemon zest, but make sure not to remove any white pith.
  14. 14. Squeeze the juice from the lemon.
  15. 15. Mix the lemon zest and juice into the fruits.
  16. 16. Bring the mixture to a boil while stirring.
  17. 17. Let the mixture bubble vigorously for three minutes.
  18. 18. Stir the jam occasionally while cooking.
  19. 19. Remove the lemon zest from the jam.
  20. 20. Fill the jam into clean screw-top jars up to the rim.
  21. 21. Seal the jars.
  22. 22. Place the jars upside down on the worktop for ten minutes.
