🍽️ Cod with Herb Sauce

Ingredients
- 0.5 Lemon
- Sea salt
- 1 tbsp Peppercorns
- 2 Bay leaves
- Pepper
- 4 Cod fillets (approx. 150 g each)
- 0.5 Handful Tarragon
- 1 Shallot
- 1 tbsp Butter
- 1 tbsp Flour
- 1 tsp Tomato paste
- 100 ml Heavy cream
- 3 tbsp Crème fraîche
- Salt
- Pepper (from the mill)
- Lemon juice
Instructions
- 1. Squeeze one lemon.
- 2. Add the lemon juice to a pot with one liter of hot water.
- 3. Add one teaspoon of salt, peppercorns, and bay leaves.
- 4. Let the broth steep for ten minutes.
- 5. Wash the fish and pat it dry.
- 6. Place the fish in the hot broth (approx. 80 degrees Celsius).
- 7. Cover the pot.
- 8. Poach the fish gently for ten to fifteen minutes.
- 9. Rinse the tarragon and shake off excess water.
- 10. Set aside a few sprigs for garnish.
- 11. Finely chop the remaining tarragon.
- 12. Peel one shallot and chop it finely.
- 13. Sauté the shallot in hot butter until translucent.
- 14. Dust the shallot with flour and cook briefly.
- 15. Stir in a spoonful of tomato paste and cook for a short moment.
- 16. Deglaze the pan with 250 milliliters of the fish broth.
- 17. Stir the sauce well.
- 18. Add cream.
- 19. Let the sauce simmer gently for five to eight minutes.
- 20. Stir in crème fraîche and the chopped tarragon.
- 21. Season the sauce with salt and pepper.
- 22. Serve the fish topped with the sauce.
- 23. Garnish with lemon zest and fresh tarragon if desired.
