  1. 1. Squeeze one lemon.
  2. 2. Add the lemon juice to a pot with one liter of hot water.
  3. 3. Add one teaspoon of salt, peppercorns, and bay leaves.
  4. 4. Let the broth steep for ten minutes.
  5. 5. Wash the fish and pat it dry.
  6. 6. Place the fish in the hot broth (approx. 80 degrees Celsius).
  7. 7. Cover the pot.
  8. 8. Poach the fish gently for ten to fifteen minutes.
  9. 9. Rinse the tarragon and shake off excess water.
  10. 10. Set aside a few sprigs for garnish.
  11. 11. Finely chop the remaining tarragon.
  12. 12. Peel one shallot and chop it finely.
  13. 13. Sauté the shallot in hot butter until translucent.
  14. 14. Dust the shallot with flour and cook briefly.
  15. 15. Stir in a spoonful of tomato paste and cook for a short moment.
  16. 16. Deglaze the pan with 250 milliliters of the fish broth.
  17. 17. Stir the sauce well.
  18. 18. Add cream.
  19. 19. Let the sauce simmer gently for five to eight minutes.
  20. 20. Stir in crème fraîche and the chopped tarragon.
  21. 21. Season the sauce with salt and pepper.
  22. 22. Serve the fish topped with the sauce.
  23. 23. Garnish with lemon zest and fresh tarragon if desired.
