  1. 1. Rinse the fish under cold running water.
  2. 2. Pat the fish completely dry with a kitchen towel.
  3. 3. Wash the limes thoroughly under hot water.
  4. 4. Dry the limes as well.
  5. 5. Finely grate the zest from one lime.
  6. 6. Squeeze the juice from this lime.
  7. 7. Peel the garlic.
  8. 8. Press the garlic.
  9. 9. Mix the lime zest, lime juice, garlic, and oil in a bowl.
  10. 10. Season the marinade with salt and pepper.
  11. 11. Coat the fish inside and out completely with the marinade.
  12. 12. Place the fish on a grill grate.
  13. 13. Slice the remaining lime.
  14. 14. Place the lime slices on the grill grate as well.
  15. 15. Close the grill grate.
  16. 16. Grill the fish on the preheated grill over medium heat.
  17. 17. Grill the fish for 15 to 20 minutes.
  18. 18. Turn the fish once halfway through the cooking time.
  19. 19. Remove the fish from the grill.
  20. 20. Serve the fish.
