🍽️ Sea Bream with Chard in Parchment Packets

Ingredients
- 1 kg chard
- 4 garlic cloves
- 6 tbsp olive oil
- salt
- pepper (from the mill)
- 2 untreated lemons (juice and grated zest)
- 4 sea bream (ready for cooking, approx. 350 g each)
- 8 pitted green olives
- 4 tbsp chopped parsley
- 80 g sliced almonds
- 4 parchment papers (large pieces)
Instructions
- 1. Wash the chard thoroughly.
- 2. Remove the tough stems from the chard.
- 3. Slice the chard leaves into thin strips.
- 4. Peel the garlic.
- 5. Mince the garlic very finely.
- 6. Heat two tablespoons of olive oil in a pan.
- 7. Add the chard to the hot pan.
- 8. Sauté the chard for about five minutes.
- 9. Stir constantly while doing so.
- 10. Stir in half of the minced garlic into the chard.
- 11. Season the chard mixture with salt and pepper.
- 12. Set the chard mixture aside.
- 13. Wash the sea bream.
- 14. Pat the fish dry with a kitchen towel.
- 15. Make two to three diagonal cuts on each side of the fish.
- 16. Drizzle the fish with lemon juice.
- 17. Season the fish inside and outside generously with salt and pepper.
- 18. Stuff the belly cavity of the fish with a portion of the chard mixture.
- 19. Slice the olives into thin rounds.
- 20. Put the lemon zest into a small bowl.
- 21. Add the remaining garlic to the bowl.
- 22. Add the parsley to the bowl.
- 23. Add the sliced almonds to the bowl.
- 24. Add one tablespoon of olive oil to the bowl.
- 25. Mix the ingredients in the bowl well.
- 26. Season the aromatic mixture with salt and pepper.
- 27. Cut pieces from parchment paper.
- 28. Brush the parchment paper pieces with one tablespoon of oil.
- 29. Spread the remaining chard on the paper.
- 30. Place the stuffed fish on the chard.
- 31. Add the garlic-almond mixture over the fish.
- 32. Sprinkle everything with the olive slices.
- 33. Drizzle the fish with two more tablespoons of olive oil.
- 34. Fold the parchment paper carefully into a sealed packet.
- 35. Ensure the fish is enclosed inside the packet.
- 36. Preheat the oven to 200 degrees Celsius.
- 37. Place the packets in the preheated oven.
- 38. Bake the packets for about twenty minutes.
- 39. Remove the packets when the fish is cooked through.
