🍽️ Crispy Sea Bream with Potato Shingles

Ingredients
- 1 Sea Bream (approx. 700 g, ready for cooking)
- 200 g firm potatoes
- salt
- freshly ground pepper
- 50 g butter
- 2 tbsp vegetable oil
- fresh thyme
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Wash the potatoes thoroughly.
- 3. Peel the potatoes.
- 4. Slice or shave the potatoes into very thin pieces.
- 5. Bring water to a boil and add some salt.
- 6. Put the potato slices into the boiling water for 3 minutes.
- 7. Remove the potatoes from the water.
- 8. Let the water drain off.
- 9. Let the potato slices cool down.
- 10. Rinse the fish under running water.
- 11. Pat the fish dry with a kitchen towel.
- 12. Insert a sprig of thyme into the inside of the fish.
- 13. Season the fish generously with salt.
- 14. Season the fish generously with pepper.
- 15. Sprinkle fresh thyme leaves over the fish.
- 16. Place the cooled potato slices overlapping on the fish.
- 17. Melt some butter in a pan.
- 18. Brush the potato layers with the melted butter.
- 19. Brush an ovenproof dish with some butter.
- 20. Place the prepared fish in the dish.
- 21. Bake the fish for about 20 minutes in the oven.
- 22. Remove the fish from the oven when the potato slices are golden brown and crispy.
