🍽️ Oven Dorade with Colorful Vegetables

Ingredients
- 2 small Dorade (rose or royal at about 300 g)
- Salt
- Pepper (from the mill)
- 2 Onions (about 200 g)
- 10 Garlic cloves
- 350 g Cluster tomatoes
- 30 g dried tomatoes
- 1 small Zucchini
- 3 tbsp Olive oil
- 100 g black pitted olives
- 2 sprigs Rosemary
- Thyme (2 sprigs each)
- Sage (2 sprigs each)
Instructions
- 1. Rinse the fish under cold running water.
- 2. Pat the fish dry thoroughly with a kitchen towel.
- 3. Season the fish inside and out with salt and pepper.
- 4. Peel the onions and slice them into thin rings.
- 5. Place the unpeeled garlic cloves on the work surface.
- 6. Press firmly on the garlic cloves with the palm of your hand until the skin cracks.
- 7. Wash the fresh tomatoes and cut them into quarters.
- 8. Cut the dried tomatoes into thin strips.
- 9. Wash the zucchini and trim off the ends.
- 10. Slice the zucchini into rounds.
- 11. Preheat the oven to 200 degrees.
- 12. Heat 2 tablespoons of olive oil in a high pan.
- 13. Add the onion rings and garlic cloves to the hot pan.
- 14. Sauté the vegetables until they are soft and translucent.
- 15. Stir in the tomato quarters, zucchini slices, and olives.
- 16. Transfer the vegetables to a baking dish.
- 17. Tie the herbs into two small bundles.
- 18. Add the herb bundles to the vegetables in the dish.
- 19. Place the fish on top of the vegetables.
- 20. Drizzle the fish with 1 tablespoon of olive oil.
- 21. Bake the fish in the oven at 200 degrees for 15 to 25 minutes.
- 22. Serve the fish together with the oven vegetables.
