  1. 1. Rinse the fish under cold running water.
  2. 2. Pat the fish dry thoroughly with a kitchen towel.
  3. 3. Season the fish inside and out with salt and pepper.
  4. 4. Peel the onions and slice them into thin rings.
  5. 5. Place the unpeeled garlic cloves on the work surface.
  6. 6. Press firmly on the garlic cloves with the palm of your hand until the skin cracks.
  7. 7. Wash the fresh tomatoes and cut them into quarters.
  8. 8. Cut the dried tomatoes into thin strips.
  9. 9. Wash the zucchini and trim off the ends.
  10. 10. Slice the zucchini into rounds.
  11. 11. Preheat the oven to 200 degrees.
  12. 12. Heat 2 tablespoons of olive oil in a high pan.
  13. 13. Add the onion rings and garlic cloves to the hot pan.
  14. 14. Sauté the vegetables until they are soft and translucent.
  15. 15. Stir in the tomato quarters, zucchini slices, and olives.
  16. 16. Transfer the vegetables to a baking dish.
  17. 17. Tie the herbs into two small bundles.
  18. 18. Add the herb bundles to the vegetables in the dish.
  19. 19. Place the fish on top of the vegetables.
  20. 20. Drizzle the fish with 1 tablespoon of olive oil.
  21. 21. Bake the fish in the oven at 200 degrees for 15 to 25 minutes.
