🍽️ Pan-fried Dorade with Caramelized Apple Slices

Ingredients
- 800 g Sea Bream Fillet (8 Sea Bream Fillets)
- Salt
- Pepper
- 10 g Parsley (0.5 Bunch)
- 2 Apples
- 15 g Butter (1 Tbsp)
- 2 Tbsp Honey
- 10 g Spelt Whole Wheat Flour (1 tsp)
- 150 ml Apple Juice (or Cider)
- 20 g Crème fraîche (1 Tbsp)
- 1 Tbsp Olive Oil
Instructions
- 1. Rinse the dorade fillets under cold running water and pat them dry with a kitchen towel. Season the fish on both sides with salt and pepper. Wash the parsley, shake off excess water, and chop it finely.
- 2. Wash the apples, cut them into quarters, remove the core, and slice the halves into wedges.
- 3. Melt the butter in a pan together with the honey until it lightly caramelizes. Add the apple wedges and simmer them over low heat for about 3 minutes.
- 4. Meanwhile, heat the oil in a non-stick pan. Fry the fish in it over medium heat for 3 to 4 minutes on each side until golden brown.
- 5. Remove the apple wedges from the pan after 3 minutes and stir in the flour. Deglaze with the juice and let the sauce thicken slightly over low heat. Stir in the crème fraîche and season with salt and pepper. Remove the pan from the heat and place the apple wedges back into the sauce.
- 6. Divide the fish with the apple sauce among four plates and sprinkle everything with the chopped parsley.
