🍽️ Oven-baked Dorade with a Crispy Potato Lid

Ingredients
- 1 Sea Bream (approx. 700 g, ready for cooking)
- 200 g Potatoes
- Salt
- Pepper
- 50 g Butter
- 2 tbsp Vegetable oil
- 1 sprig Thyme
- Thyme leaves (for sprinkling)
Instructions
- 1. Preheat your oven to 200 degrees Celsius using top and bottom heat.
- 2. Wash the potatoes thoroughly under running water.
- 3. Peel the potatoes completely.
- 4. Slice or shred the potatoes into very thin pieces.
- 5. Bring water to a boil in a pot and add some salt.
- 6. Add the potato slices to the boiling water for 3 minutes to parboil them (blanching).
- 7. Remove the potatoes from the water and let them drain well.
- 8. Allow the potato slices to cool down completely.
- 9. Rinse the fish under cold water.
- 10. Pat the fish dry with a kitchen towel.
- 11. Insert a sprig of thyme into the inside of the fish.
- 12. Season the fish generously with salt and pepper.
- 13. Sprinkle fresh thyme leaves over the fish.
- 14. Arrange the cooled potato slices on top of the fish like roof tiles.
- 15. Melt some butter in a small pan.
- 16. Brush the potato layers with the melted butter.
- 17. Grease an ovenproof dish with some butter.
- 18. Place the prepared fish into the greased dish.
- 19. Bake the fish in the oven for about 30 minutes.
- 20. Check if the potato slices are golden brown.
- 21. Switch the oven to top heat only if the potatoes are not brown enough yet.
- 22. Brown the fish for an additional 5 minutes.
