  1. 1. Preheat your oven to 200 degrees Celsius using top and bottom heat.
  2. 2. Wash the potatoes thoroughly under running water.
  3. 3. Peel the potatoes completely.
  4. 4. Slice or shred the potatoes into very thin pieces.
  5. 5. Bring water to a boil in a pot and add some salt.
  6. 6. Add the potato slices to the boiling water for 3 minutes to parboil them (blanching).
  7. 7. Remove the potatoes from the water and let them drain well.
  8. 8. Allow the potato slices to cool down completely.
  9. 9. Rinse the fish under cold water.
  10. 10. Pat the fish dry with a kitchen towel.
  11. 11. Insert a sprig of thyme into the inside of the fish.
  12. 12. Season the fish generously with salt and pepper.
  13. 13. Sprinkle fresh thyme leaves over the fish.
  14. 14. Arrange the cooled potato slices on top of the fish like roof tiles.
  15. 15. Melt some butter in a small pan.
  16. 16. Brush the potato layers with the melted butter.
  17. 17. Grease an ovenproof dish with some butter.
  18. 18. Place the prepared fish into the greased dish.
  19. 19. Bake the fish in the oven for about 30 minutes.
  20. 20. Check if the potato slices are golden brown.
  21. 21. Switch the oven to top heat only if the potatoes are not brown enough yet.
  22. 22. Brown the fish for an additional 5 minutes.
