🍰 Fresh Homemade Donuts

Ingredients
- 450 g spelt flour Type 1050 (+ 1 tbsp for working)
- 80 g raw cane sugar
- 1 pinch salt
- 0.5 tsp vanilla powder
- 2 eggs
- 200 ml lukewarm milk (3.5 % fat)
- 0.5 cube fresh yeast (21 g)
- 80 g soft butter
- 1.5 l vegetable oil for frying
Instructions
- 1. Put the flour into a large bowl.
- 2. Sift the flour directly into the bowl.
- 3. Mix the flour with 60 grams of sugar.
- 4. Add a pinch of salt to the mixture.
- 5. Add vanilla.
- 6. Press a small well into the center of the flour mixture with your palm.
- 7. Put the eggs into the well.
- 8. Pour the milk into the well.
- 9. Crumble the yeast directly into the bowl.
- 10. Work all ingredients vigorously by hand or with a mixer.
- 11. Knead until a smooth dough forms.
- 12. Cut the butter into small cubes.
- 13. Knead the butter cubes completely into the dough.
- 14. Check if the dough is soft and elastic.
- 15. Ensure the dough releases easily from the sides of the bowl.
- 16. Cover the bowl.
- 17. Let the yeast dough rise in a warm place for about 1 hour.
- 18. Lightly dust your work surface with flour.
- 19. Roll out the dough to a thickness of about 1.5 centimeters.
- 20. Cut out about 12 circles using a round cutter or glass.
- 21. Make sure the circles have a diameter of 8 centimeters.
- 22. Poke a small hole in the center of each circle.
- 23. The hole should have a diameter of 2 centimeters.
- 24. Cover the donuts with a clean kitchen towel.
- 25. Let them rest for another 30 minutes.
- 26. Heat cooking oil in a pot or deep fryer.
- 27. Set the temperature to about 170 degrees Celsius.
- 28. Fry the donuts in batches in the oil.
- 29. Fry them for about 2 minutes per side.
- 30. Remove the donuts when they are golden brown.
- 31. Let them drain on a wire rack.
- 32. Sprinkle the donuts with the remaining sugar while they are still warm.
