  1. 1. Place the cherries in a sieve and let the juice drain completely. Catch the juice in a bowl.
  2. 2. Rinse the lemon under hot water and pat it dry.
  3. 3. Grate the lemon zest finely.
  4. 4. Squeeze the juice from the lemon.
  5. 5. Pour the collected cherry juice and the cinnamon into a pot.
  6. 6. Bring the mixture in the pot to a boil.
  7. 7. Simmer the sauce over medium heat for about 3 minutes.
  8. 8. Mix the cornstarch with 2 tablespoons of lemon juice until a smooth paste forms.
  9. 9. Stir the starch-lemon mixture into the boiling cherry sauce.
  10. 10. Continue stirring the sauce until it thickens.
  11. 11. Add the drained cherries to the sauce.
  12. 12. Add the grated lemon zest to the sauce.
  13. 13. Pour the sauce into a bowl and let it cool.
  14. 14. Separate the eggs: Take the egg yolk away from the egg white.
  15. 15. Beat the egg yolks with 20 grams of sugar and vanilla powder until the mixture is frothy.

  17. 17. Alternately stir in buttermilk and melted butter into the egg yolk mixture.
