🍰 Spelt Waffles with Cherry Sauce

Ingredients
- 370 g sour cherries (drained weight; jar)
- 1 organic lemon
- 1.5 tsp cinnamon
- 2 tbsp cornstarch
- 3 eggs
- 30 g raw cane sugar
- 125 g spelt wholemeal flour
- 125 g spelt flour (Type 630)
- 2 tsp baking powder
- 1 pinch vanilla powder
- 500 ml buttermilk
- 45 g melted butter
- 1 pinch salt
- Powdered sugar from raw cane sugar (to taste)
Instructions
- 1. Place the cherries in a sieve and let the juice drain completely. Catch the juice in a bowl.
- 2. Rinse the lemon under hot water and pat it dry.
- 3. Grate the lemon zest finely.
- 4. Squeeze the juice from the lemon.
- 5. Pour the collected cherry juice and the cinnamon into a pot.
- 6. Bring the mixture in the pot to a boil.
- 7. Simmer the sauce over medium heat for about 3 minutes.
- 8. Mix the cornstarch with 2 tablespoons of lemon juice until a smooth paste forms.
- 9. Stir the starch-lemon mixture into the boiling cherry sauce.
- 10. Continue stirring the sauce until it thickens.
- 11. Add the drained cherries to the sauce.
- 12. Add the grated lemon zest to the sauce.
- 13. Pour the sauce into a bowl and let it cool.
- 14. Separate the eggs: Take the egg yolk away from the egg white.
- 15. Beat the egg yolks with 20 grams of sugar and vanilla powder until the mixture is frothy.
- 16. Mix the flours with the baking powder.
- 17. Alternately stir in buttermilk and melted butter into the egg yolk mixture.
- 18. Beat the egg whites with the remaining sugar and salt until stiff.
- 19. Fold the stiffly beaten egg whites into the batter.
- 20. Preheat the waffle iron.
- 21. Grease the waffle iron if necessary.
- 22. Pour a ladleful of batter into the waffle iron.
- 23. Bake the waffles one after another until golden brown.
- 24. Dust the finished waffles with powdered sugar.
- 25. Serve the waffles together with the cherry sauce.
