🍽️ Spelt Pizza with Grilled Vegetables

Ingredients
- 200 g spelt whole wheat flour
- 200 g spelt flour (Type 630)
- salt
- 0.5 cube yeast
- 250 g zucchini (1 zucchini)
- 200 g small eggplants (1 eggplant)
- 200 g yellow bell peppers (1 bell pepper)
- 2 garlic cloves
- 6 sprigs thyme
- 4 tbsp olive oil
- pepper
- 250 g ricotta
Instructions
- 1. Add both types of flour and half a teaspoon of salt to a bowl and mix them.
- 2. Press a small indentation into the center of the flour mixture and crumble the yeast into it.
- 3. Pour 250 milliliters of lukewarm water into the bowl.
- 4. Knead the dough smooth using the dough hooks of your hand mixer.
- 5. Cover the dough with a kitchen towel.
- 6. Let the dough rise in a warm place for about 30 minutes.
- 7. Thoroughly wash the zucchini, eggplant, and bell pepper.
- 8. Remove the tough parts of the vegetables and dry them well.
- 9. Slice the zucchini and eggplant into rounds about 1 centimeter thick.
- 10. Cut the bell pepper into strips.
- 11. Peel the garlic.
- 12. Slice the garlic thinly.
- 13. Wash the thyme and shake it dry.
- 14. Pluck the thyme leaves from the stems.
- 15. Mix the oil with the garlic slices and thyme leaves.
- 16. Season the oil mixture with salt and pepper.
- 17. Heat a grill pan.
- 18. Fry the vegetables in batches in the pan.
- 19. Turn the vegetables regularly while frying.
- 20. Fry the vegetables for about 5 minutes.
- 21. Drizzle the vegetables with the garlic-thyme oil mixture repeatedly while frying.
- 22. Lightly dust a work surface with flour.
- 23. Divide the pizza dough on the work surface into 4 equal portions.
- 24. Roll each dough portion into a round pizza with a diameter of about 23 centimeters.
- 25. Place 2 pizzas on a sheet of baking paper large enough for a baking tray.
- 26. Slide the baking paper with the pizzas onto the baking tray.
- 27. Spread ricotta over the pizzas.
- 28. Distribute the grilled vegetables on the pizzas.
- 29. Preheat the oven to 225 degrees Celsius conventional heat (or 200 degrees Celsius fan, gas mark 3-4).
- 30. Place the baking tray with the pizzas on the lowest rack.
- 31. Bake the pizzas for 15 to 20 minutes.
- 32. Remove the finished pizzas from the oven.
- 33. Slide the pizzas along with the baking paper off the baking tray.
- 34. Place the baking paper with the remaining pizzas on the baking tray.
- 35. Top the remaining pizzas in the same way.
- 36. Bake the remaining pizzas in the preheated oven as well.
