  1. 1. Add both types of flour and half a teaspoon of salt to a bowl and mix them.
  2. 2. Press a small indentation into the center of the flour mixture and crumble the yeast into it.
  3. 3. Pour 250 milliliters of lukewarm water into the bowl.
  4. 4. Knead the dough smooth using the dough hooks of your hand mixer.
  5. 5. Cover the dough with a kitchen towel.
  6. 6. Let the dough rise in a warm place for about 30 minutes.
  7. 7. Thoroughly wash the zucchini, eggplant, and bell pepper.
  8. 8. Remove the tough parts of the vegetables and dry them well.
  9. 9. Slice the zucchini and eggplant into rounds about 1 centimeter thick.
  10. 10. Cut the bell pepper into strips.
  11. 11. Peel the garlic.
  12. 12. Slice the garlic thinly.
  13. 13. Wash the thyme and shake it dry.
  14. 14. Pluck the thyme leaves from the stems.
  15. 15. Mix the oil with the garlic slices and thyme leaves.
  16. 16. Season the oil mixture with salt and pepper.
  17. 17. Heat a grill pan.
  18. 18. Fry the vegetables in batches in the pan.
  19. 19. Turn the vegetables regularly while frying.
  20. 20. Fry the vegetables for about 5 minutes.
  21. 21. Drizzle the vegetables with the garlic-thyme oil mixture repeatedly while frying.
  22. 22. Lightly dust a work surface with flour.
  23. 23. Divide the pizza dough on the work surface into 4 equal portions.
  24. 24. Roll each dough portion into a round pizza with a diameter of about 23 centimeters.
  25. 25. Place 2 pizzas on a sheet of baking paper large enough for a baking tray.
  26. 26. Slide the baking paper with the pizzas onto the baking tray.
  27. 27. Spread ricotta over the pizzas.
  28. 28. Distribute the grilled vegetables on the pizzas.
  29. 29. Preheat the oven to 225 degrees Celsius conventional heat (or 200 degrees Celsius fan, gas mark 3-4).
  30. 30. Place the baking tray with the pizzas on the lowest rack.
  31. 31. Bake the pizzas for 15 to 20 minutes.
  32. 32. Remove the finished pizzas from the oven.
  33. 33. Slide the pizzas along with the baking paper off the baking tray.
  34. 34. Place the baking paper with the remaining pizzas on the baking tray.
  35. 35. Top the remaining pizzas in the same way.
  36. 36. Bake the remaining pizzas in the preheated oven as well.
