🍰 Simple Spelt Pancakes

Ingredients
- 125 g finely ground spelt flour
- 325 ml milk (1.5% fat)
- 3 eggs
- salt
- 2 tbsp rapeseed oil
Instructions
- 1. Sift the spelt flour into a bowl. Stir in the milk until the batter is smooth and lump-free. Let the batter rest for 30 minutes.
- 2. Whisk the eggs with a pinch of salt. Add them along with one tablespoon of oil to the flour and mix well. If any small lumps have formed, carefully strain the batter through a fine sieve.
- 3. Heat a large pan with a diameter of 26 centimeters. Lightly grease it with some oil.
- 4. Pour about one-eighth of the pancake batter into the hot pan. Cook the pancake until golden brown on both sides. Repeat this process until you have baked a total of eight thin pancakes.
- 5. Stack the finished spelt pancakes on a plate. Let them cool completely or eat them warm right away.
