  2. 2. Separate the vegetables into small, bite-sized florets.
  3. 3. Peel the pumpkin and remove the inside.
  4. 4. Cut the pumpkin flesh into small cubes.
  5. 5. Bring a pot with a small amount of water to a boil and add some salt.
  6. 6. Cook the vegetables in separate batches for 8 to 10 minutes.
  7. 7. Cook the vegetables only until al dente, meaning they should still have some firmness.
  8. 8. Remove the cooked vegetables from the pot using a sieve.
  9. 9. Let the vegetables drain well in the sieve.
  10. 10. Bring a new pot of salted water to a boil.
  11. 11. Cook the spelt noodles according to the package instructions until al dente.
  12. 12. Drain the noodles.
  13. 13. Let the noodles drain well as well.
  14. 14. Heat the olive oil in a coated pan.
  15. 15. Add the prepared vegetables to the hot pan.
  16. 16. Sauté the vegetables briefly while stirring constantly.
  17. 17. Add the drained noodles to the pan.
  18. 18. Toss the pan briefly to mix everything well.
  19. 19. Season the dish with salt and pepper to taste.
  20. 20. Gently fold the fresh basil leaves into the noodles.
  21. 21. Distribute the crème fraîche evenly over the finished dish.
