🍽️ Colorful Spelt Noodle Pan with Pumpkin and Vegetables

Ingredients
- 250 g Broccoli
- 250 g Cauliflower
- 300 g Pumpkin flesh
- Salt
- 400 g Spelt noodles
- 3 tbsp Olive oil
- Pepper
- some Basil
- 100 g Crème fraîche
Instructions
- 1. Rinse the cauliflower and broccoli under running water.
- 2. Separate the vegetables into small, bite-sized florets.
- 3. Peel the pumpkin and remove the inside.
- 4. Cut the pumpkin flesh into small cubes.
- 5. Bring a pot with a small amount of water to a boil and add some salt.
- 6. Cook the vegetables in separate batches for 8 to 10 minutes.
- 7. Cook the vegetables only until al dente, meaning they should still have some firmness.
- 8. Remove the cooked vegetables from the pot using a sieve.
- 9. Let the vegetables drain well in the sieve.
- 10. Bring a new pot of salted water to a boil.
- 11. Cook the spelt noodles according to the package instructions until al dente.
- 12. Drain the noodles.
- 13. Let the noodles drain well as well.
- 14. Heat the olive oil in a coated pan.
- 15. Add the prepared vegetables to the hot pan.
- 16. Sauté the vegetables briefly while stirring constantly.
- 17. Add the drained noodles to the pan.
- 18. Toss the pan briefly to mix everything well.
- 19. Season the dish with salt and pepper to taste.
- 20. Gently fold the fresh basil leaves into the noodles.
- 21. Distribute the crème fraîche evenly over the finished dish.
