🍽️ Crispy Spelt Flatbreads

Ingredients
- 250 g spelt flour Type 1050
- 250 g spelt wholemeal flour
- 1 packet dry yeast
- 1 tsp demerara sugar
- 1 tsp salt
- 125 ml milk (3.5% fat)
- 1 tbsp olive oil
- 1 tsp coarse sea salt
Instructions
- 1. Mix the flour, dry yeast, sugar, and salt in a large mixing bowl.
- 2. Warm the milk and 250 milliliters of water in a pot until lukewarm. Pour the liquid into the flour mixture and knead everything thoroughly with the dough hooks of your hand mixer until you have a smooth dough.
- 3. Cover the bowl and let the dough rise in a warm place for at least one hour.
- 4. Knead the dough briefly again by hand. Divide it into four equal pieces and shape them into round, flat flatbreads.
- 5. Place the dough flatbreads on two baking sheets lined with baking paper. Brush them with oil and sprinkle the sea salt evenly over the top.
- 6. Bake the flatbreads one after another or simultaneously with fan assistance in the preheated oven at 200 degrees Celsius (180 degrees Celsius with fan or gas level 3) on the middle rack for about 20 minutes until golden brown.
