  1. 1. Soak sunflower seeds overnight in water. Stir yeast with a little water until smooth. Mix in the remaining water, salt, and oil. Add flour, knead the dough vigorously with the dough hooks of an electric hand mixer, then let it rise covered in a warm place for about 30 minutes.
  2. 2. Peel and grate carrots. Wash and trim spring onions, and cut the white and light green parts into fine strips.
  3. 3. Then knead the dough vigorously on a floured work surface and knead in the carrots, spring onions, and well-drained sunflower seeds.
  4. 4. Shape into a loaf and place in a greased loaf pan. Whisk egg yolk and milk and brush the loaf with this mixture, then sprinkle with sunflower seeds. Let rise for another 15 minutes.
  5. 5. Then bake in a preheated oven (200°C) for 10 minutes and for another 40 minutes at 180°C. Place a dish of boiling water in the oven.
