🍰 Moist Spelt Apple Cake with Almonds

Ingredients
- 2 sour apples
- 2 tbsp lemon juice
- 1 tsp cinnamon powder
- 150 g soft butter
- 1 pinch salt
- 80 g coconut blossom sugar
- 3 eggs
- 300 g spelt wholemeal flour
- 1 tsp baking powder
- 50 g ground almond kernels
- 60 ml milk (3.5% fat)
Instructions
- 1. Peel the apples.
- 2. Cut the apples into quarters.
- 3. Remove the core from the apple quarters.
- 4. Slice the apple pieces thinly.
- 5. Toss the apple slices with lemon juice and cinnamon.
- 6. Beat the butter with a pinch of salt until creamy.
- 7. Gradually add the coconut blossom sugar to the butter mixture.
- 8. Stir in the eggs one by one and mix well.
- 9. Put the flour, baking powder, and almonds into a separate bowl.
- 10. Mix the dry ingredients in the bowl.
- 11. Alternately add the flour mixture and the milk to the batter.
- 12. Stir quickly until a smooth, spreadable dough forms.
- 13. Fold in the prepared apple pieces into the batter.
- 14. Line a baking pan with parchment paper.
- 15. Pour the batter into the prepared pan.
- 16. Smooth the top of the batter.
- 17. Preheat the oven to 180 °C (convection 160 °C; gas mark 2–3).
- 18. Bake the cake for about 40 minutes until golden brown.
- 19. Check for doneness with a wooden skewer.
- 20. Remove the cake from the oven.
- 21. Let the cake cool completely on a wire rack.
