🍽️ Spelt and Spinach Bowl with Peanut Dressing

Ingredients
- Salt
- 200 g spelt
- 120 g peanuts
- 1 lime
- 400 g green beans
- 1 tbsp olive oil
- pepper
- 200 g baby spinach
- 100 g red seedless grapes
Instructions
- 1. Bring 400 milliliters of water with salt to a boil.
- 2. Add the spelt to the boiling water.
- 3. Simmer the spelt covered over medium heat for 25 to 30 minutes.
- 4. Soak the peanuts in 200 milliliters of water for 15 minutes.
- 5. Cut the lime in half.
- 6. Squeeze out the lime juice.
- 7. Trim and wash the beans.
- 8. Cook the beans in boiling water over medium heat for 7 to 8 minutes until al dente.
- 9. Drain the beans.
- 10. Rinse the beans with cold water to stop the cooking.
- 11. Let the beans drain.
- 12. Heat the oil in a pan.
- 13. Fry the beans in the pan for 3 minutes over medium heat.
- 14. Season the beans with salt and pepper.
- 15. Trim and wash the baby spinach.
- 16. Wash the grapes.
- 17. Cut the grapes in half.
- 18. Remove the seeds from the grapes if necessary.
- 19. Puree the soaked peanuts together with the soaking water for the dressing.
- 20. Season the sauce with salt and pepper.
- 21. Add 2 tablespoons of lime juice to the sauce.
- 22. Divide the drained spelt among 4 bowls.
- 23. Divide the beans among 4 bowls.
- 24. Divide the spinach among 4 bowls.
- 25. Divide the grapes among 4 bowls.
- 26. Drizzle the bowls with the dressing.
