🍽️ Homemade Dim Sum Dumplings

Ingredients
- 200 g wheat starch
- boiling water
- 100 g chopped shrimp
- 1 pinch freshly grated ginger
- 1 tbsp sesame oil
- pepper (from the mill)
- 1 tbsp finely chopped onions (or leeks)
- salt
- 1 egg yolk
- 6 soy sauce
- 1 tbsp chives
Instructions
- 1. Put the wheat starch into a bowl.
- 2. Add water slowly.
- 3. Knead the dough until it is smooth and pliable.
- 4. Roll out the dough thinly.
- 5. Cut out round circles with a diameter of about 10 cm.
- 6. Put the shrimp into a separate bowl.
- 7. Add the grated ginger.
- 8. Add the sesame oil.
- 9. Sprinkle the pepper over it.
- 10. Add the finely chopped onion or leek.
- 11. Salt the mixture.
- 12. Mix everything well until the filling is uniform.
- 13. Place a spoonful of filling in the center of each dough circle.
- 14. Put the egg yolk into a small bowl.
- 15. Add one tablespoon of water to the egg yolk.
- 16. Whisk the egg yolk with the water.
- 17. Brush the edges of the dough circles with the egg yolk mixture.
- 18. Fold the dough over the filling.
- 19. Press the edges together.
- 20. Create alternating small pleats to seal the dumplings.
- 21. Ensure that the edges form a zigzag pattern.
- 22. Place the dumplings into a bamboo steamer basket.
- 23. Steam the dumplings over boiling vapor.
- 24. Steam them for 10 minutes.
- 25. Check if the dumplings are cooked through.
- 26. Put all the sauce ingredients into a small bowl.
- 27. Stir the sauce well.
- 28. Serve the dim sum dumplings with the sauce.
