🍽️ Crispy Dill Oat Patties with Fresh Dandelion Dip

Ingredients
- 150 g fine oat flakes
- 20 g dill (1 bunch)
- 1 shallot
- 1 clove garlic
- 2.5 tbsp olive oil
- 300 g small salad cucumber (1 small salad cucumber)
- 50 g Gouda (1 piece; 45 % fat in dry matter)
- 1 egg
- 20 g ground flaxseeds (2 tbsp)
- 90 g whole wheat breadcrumbs
- salt
- pepper
- 0.5 lemon
- 10 g dandelion (3 leaves)
- 250 g yogurt (3.5 % fat)
Instructions
- 1. Place the oat flakes in a bowl.
- 2. Pour double the amount of boiling water over the oat flakes.
- 3. Stir the mixture well.
- 4. Let the oat flakes swell for about 10 minutes.
- 5. Wash the dill under running water.
- 6. Shake the dill dry.
- 7. Chop the dill finely.
- 8. Peel the shallot.
- 9. Peel the garlic.
- 10. Chop the shallot finely.
- 11. Chop the garlic finely.
- 12. Heat 1 teaspoon of oil in a small pan.
- 13. Sauté the shallot and garlic in it over medium heat.
- 14. Cook the shallot and garlic for 3 minutes.
- 15. Trim the cucumber.
- 16. Wash the cucumber.
- 17. Grate the cucumber coarsely.
- 18. Grate the Gouda cheese.
- 19. Take the soaked oat flakes.
- 20. Mix the oat flakes with the egg.
- 21. Add the flaxseeds.
- 22. Add the chopped herbs.
- 23. Add the grated cucumber.
- 24. Add the grated cheese.
- 25. Add the sautéed shallot.
- 26. Add the sautéed garlic.
- 27. Add the breadcrumbs.
- 28. Season the mixture with salt.
- 29. Season the mixture with pepper.
- 30. Check if the mixture seems too wet.
- 31. If so, add some more breadcrumbs.
- 32. Shape the mixture into 12 small patties.
- 33. Heat 1 teaspoon of oil in a pan.
- 34. Place 4 patties in the hot pan.
- 35. Fry the patties over medium heat.
- 36. Fry the patties for 3 to 4 minutes per side.
- 37. Fry the patties until golden brown.
- 38. Fry the rest of the patties in the same way.
- 39. Place the finished patties in the preheated oven.
- 40. Cook the patties at 100 degrees Celsius (convection 80 degrees Celsius; gas: level 1).
- 41. Leave the patties in the oven for 15 minutes.
- 42. Squeeze the juice from half a lemon.
- 43. Wash the dandelion under running water.
- 44. Shake the dandelion dry.
- 45. Chop the dandelion finely.
- 46. Mix the dandelion with 1 tablespoon of lemon juice.
- 47. Mix the mixture with yogurt.
- 48. Season the dip with salt.
- 49. Season the dip with pepper.
- 50. Serve the patties together with the dip.
