🍽️ Crispy Fava Bean and Chickpea Pancakes

Ingredients
- 200 g thick beans (frozen; thawed)
- 150 g chickpeas (can; drained weight)
- 1 red chili pepper
- 20 g soy flour (2 tbsp)
- 80 g chickpea flour
- 20 g cornstarch (2 tbsp)
- salt
- 1 tsp advieh (Iranian spice mix)
- 0.5 tsp turmeric powder
- 2 eggs
- 250 ml milk (3.5% fat)
- 1 clove garlic
- 4 sprigs dill
- 1 tbsp olive oil
Instructions
- 1. Wash the green beans thoroughly.
- 2. Boil the beans in boiling water for 4 minutes.
- 3. Drain the water and rinse the beans with cold water to cool them down quickly.
- 4. Let the beans drain well in a sieve.
- 5. Remove the outer skin from the beans if necessary.
- 6. Rinse the chickpeas in a sieve under running water.
- 7. Let the chickpeas drain well as well.
- 8. Cut the chili pepper in half lengthwise.
- 9. Remove the seeds from the chili pepper.
- 10. Wash the deseeded chili peppers.
- 11. Finely chop the chili peppers.
- 12. Put the soy flour into a bowl.
- 13. Add the chickpea flour to the bowl.
- 14. Add the starch to the bowl.
- 15. Salt the flour mixture.
- 16. Add the spice mix Advieh to the bowl.
- 17. Add the turmeric to the bowl.
- 18. Mix all dry ingredients in the bowl well.
- 19. Whisk the eggs in a separate bowl with the milk.
- 20. Stir the egg-milk mixture into the flours.
- 21. Peel the garlic.
- 22. Finely chop the garlic.
- 23. Add the chopped garlic to the batter.
- 24. Wash the dill.
- 25. Shake the dill dry.
- 26. Finely chop the dill.
- 27. Add the chopped dill to the batter.
- 28. Mix the dill well with the chopped chili in the batter.
- 29. Heat the oil in an oven-safe pan.
- 30. Pour the batter into the hot pan.
- 31. Add the drained chickpeas to the mixture in the pan.
- 32. Add the drained beans to the mixture in the pan.
- 33. Cook the mixture for 2 minutes over medium heat on the stove.
- 34. Preheat the oven to 200 °C (convection 180 °C; gas: setting 3).
- 35. Place the pan in the preheated oven for 20 minutes.
- 36. Remove the pan from the oven when the mixture is set and lightly browned.
- 37. Cut the finished pancake into pieces.
