🍲 Fresh Detox Vegetable Soup

Ingredients
- 500 g broccoli
- 300 g savoy cabbage
- 2 potatoes
- 2 carrots
- 2 parsnips
- 2 stalks celery
- 4 garlic cloves
- 1 onion
- 1 tbsp coconut oil
- 1.2 l vegetable broth
Instructions
- 1. Wash the broccoli thoroughly.
- 2. Separate the broccoli into small florets.
- 3. Peel the tough stem of the broccoli.
- 4. Finely chop the peeled stem.
- 5. Clean the savoy cabbage.
- 6. Remove the hard stem and the outer leaves from the savoy cabbage.
- 7. Slice the remaining savoy cabbage leaves into thin strips.
- 8. Peel the potatoes.
- 9. Cut the potatoes into small cubes.
- 10. Peel, wash, and dice the carrots.
- 11. Peel, wash, and dice the parsnips.
- 12. Peel, wash, and dice the celery stalks.
- 13. Peel the garlic clove.
- 14. Peel the onion.
- 15. Finely chop the onion and the garlic.
- 16. Heat the oil in a large pot.
- 17. Add the prepared vegetables to the pot.
- 18. Sauté the vegetables for 5 minutes over medium heat.
- 19. Pour the vegetable broth into the pot.
- 20. Let the soup simmer for 15 to 20 minutes.
- 21. Puree the cooked vegetables with a hand blender.
- 22. Blend the soup until it is completely smooth.
- 23. Serve the finished soup on plates.
- 24. Enjoy the soup.
