  1. 1. Cook the pasta in plenty of salted water until al dente. Drain, rinse briefly with cold water, and let them drain well.
  2. 2. Fry the sausages in one tablespoon of olive oil all around. Then slice them diagonally into thick pieces.
  3. 3. Peel the onions, cut them in half lengthwise, and slice them into thin strips lengthwise as well.
  4. 4. Wash the cherry tomatoes and cut them in half. Wash the arugula, remove any damaged leaves, and tear the leaves into smaller pieces.
  5. 5. Whisk the balsamic vinegar with the remaining oil, salt, and pepper. Taste and mix the dressing with the salad. Serve the pasta salad topped with grated Parmesan.
