🍝 Hearty Pasta Salad

Ingredients
- 300 g whole wheat penne
- salt
- 250 g thin poultry sausage
- 5 tbsp olive oil
- 2 red onions
- 300 g cherry tomatoes
- 0.5 bunch arugula
- 3 tbsp balsamic vinegar
- pepper (from the mill)
- 4 tbsp grated parmesan
Instructions
- 1. Cook the pasta in plenty of salted water until al dente. Drain, rinse briefly with cold water, and let them drain well.
- 2. Fry the sausages in one tablespoon of olive oil all around. Then slice them diagonally into thick pieces.
- 3. Peel the onions, cut them in half lengthwise, and slice them into thin strips lengthwise as well.
- 4. Wash the cherry tomatoes and cut them in half. Wash the arugula, remove any damaged leaves, and tear the leaves into smaller pieces.
- 5. Whisk the balsamic vinegar with the remaining oil, salt, and pepper. Taste and mix the dressing with the salad. Serve the pasta salad topped with grated Parmesan.
