🍽️ Hearty Vegetable Stew

Ingredients
- 1 onion
- 3 stalks celery
- 3 carrots
- 1 parsnip
- 2 tbsp ghee
- 250 g Beluga lentils
- 600 ml vegetable broth
- 1 tsp juniper berries
- 0.5 tsp peppercorns
- 1 tsp cumin seeds
- 1 bay leaf
- 400 g diced tomatoes (can)
- salt
- 2 tbsp apple cider vinegar
- 4 coarse frying sausages
- 2 tbsp rapeseed oil
Instructions
- 1. Peel the onion and chop it very finely.
- 2. Clean, wash, and peel (if necessary) the celery, carrots, and parsnips.
- 3. Cut the vegetables into small cubes.
- 4. Heat butter oil in a large pot.
- 5. Add the onions and sauté them over medium heat until translucent (soft and see-through).
- 6. Add the remaining vegetables and fry them together for 2 to 3 minutes.
- 7. Rinse the lentils and add them to the vegetables.
- 8. Pour in the broth.
- 9. Grind juniper berries, peppercorns, and cumin seeds finely together in a mortar.
- 10. Add the ground spice along with the bay leaf to the stew.
- 11. Let it simmer over low heat for about 30 minutes.
- 12. Add the tomatoes during the last 10 minutes.
- 13. Add more broth if necessary, as the liquid may have evaporated.
- 14. Season the stew to taste with salt and vinegar.
- 15. Fry the sausages in a pan with hot oil on all sides for about 5 minutes.
- 16. Cut them in half if desired and serve them alongside the hearty vegetable stew.
