  1. 1. Wash the mushrooms thoroughly and slice them thinly.
  2. 2. Dice the ham into small cubes.
  3. 3. Peel the onion and dice it finely.
  4. 4. Heat the oil in an oven-safe pan.
  5. 5. Sauté the onion cubes until they are translucent.
  6. 6. Add the ham and mushrooms to the pan.
  7. 7. Season the vegetables with salt and pepper.
  8. 8. Wait until the mushroom juice has completely evaporated.
  9. 9. Stir in the parsley and red wine.
  10. 10. Rub the beef fillet slices with pepper and lemon juice.
  11. 11. Place the fillets on top of the vegetables in the pan.
  12. 12. Drizzle the fillets with olive oil.
  13. 13. Place the pan on the middle rack in the preheated oven at 200°C conventional heat.
  14. 14. Turn the fillet steaks twice during the cooking time of about 8 to 12 minutes.
  15. 15. Season the steaks with salt to taste when turning them.
