🍽️ Hearty Cabbage Soup

Ingredients
- 500 g White cabbage
- 1 Onion
- 50 g Breakfast bacon
- 3 tbsp Oil
- 1 l Vegetable broth (instant)
- 20 g Flour
- 1 tbsp Tomato paste
- 1 tbsp Paprika powder (mild)
- 250 g Sour cream
- Salt
- Cumin
- 2 Garlic cloves
- Pepper (from the mill)
- 3 slices Dark bread
- 1 tbsp Butter
- 4 tbsp Whipping cream
- Paprika powder
Instructions
- 1. Dice the bacon into small cubes.
- 2. Fry the bacon cubes briefly in some oil.
- 3. Add the finely chopped onions.
- 4. Cook the onions until they are translucent.
- 5. Remove the pan from the heat.
- 6. Stir in paprika powder and tomato paste.
- 7. Pour in the broth.
- 8. Remove the outer leaves of the cabbage.
- 9. Quarter the cabbage lengthwise.
- 10. Cut off the hard core.
- 11. Slice the rest of the cabbage into thin strips.
- 12. Add the cabbage to the prepared broth.
- 13. Simmer the soup with the spices for about 25 minutes.
- 14. Mix the sour cream smoothly with the flour.
- 15. Quickly stir the sour cream mixture into the soup using a whisk.
- 16. Let the soup boil briefly.
- 17. Season the soup to taste.
- 18. Cut the black bread into small cubes.
- 19. Toast the bread cubes in hot butter.
- 20. Divide the soup among the plates.
- 21. Sprinkle the soup with the croutons.
- 22. Add a dollop of sour cream to each serving.
- 23. Dust the soup lightly with paprika.
- 24. Serve the dish.
