🍽️ Hearty Vegetable Soup with Garlic Sausage

Ingredients
- 250 g carrots
- 250 g potatoes
- 250 g white cabbage
- 2 shallots
- 1 tbsp butter
- 1.5 l meat broth
- 4 Salsiccia (garlic sausages)
- salt
- pepper (from the mill)
- nutmeg (freshly grated)
- 2 tbsp chive rings
Instructions
- 1. Peel the carrots and the potatoes.
- 2. Slice the carrots.
- 3. Cut the potatoes into small, bite-sized cubes.
- 4. Remove the outer leaves from the cabbage.
- 5. Cut the cabbage into thin strips.
- 6. Peel the shallots.
- 7. Chop the shallots very finely.
- 8. Heat the butter in a pot.
- 9. Sauté the shallots in the hot butter until they become translucent.
- 10. Add the prepared vegetables to the pot.
- 11. Sauté the vegetables briefly.
- 12. Pour the meat broth into the pot.
- 13. Let the soup simmer for about 15 minutes.
- 14. Prick the sausages several times with a fork.
- 15. Add the sausages to the soup.
- 16. Let the sausages cook in the soup for another 5 minutes.
- 17. Season the soup with salt, pepper, and nutmeg.
- 18. Serve the soup with fresh chives.
