🍽️ Hearty Fried Potatoes with Chorizo and Quail Eggs

Ingredients
- 700 g potatoes (mostly waxy)
- 200 g chorizo
- 1 shallot
- 200 g bell peppers (orange and green)
- 1 tbsp olive oil
- salt
- paprika powder (sweet)
- 8 quail eggs
- 0.5 handful parsley
- pepper (from the mill)
Instructions
- 1. Thoroughly wash the potatoes under running water.
- 2. Place the potatoes in a pot with salted water.
- 3. Boil the potatoes for about 20 minutes until tender.
- 4. Drain the water and let the potatoes steam dry in the colander.
- 5. Slice the chorizo sausage into rounds about 1 cm thick.
- 6. Fry the chorizo slices in a non-stick pan for 2 to 3 minutes.
- 7. Remove the fried sausage from the pan and set it aside.
- 8. Peel the shallot and dice it finely.
- 9. Wash the peppers and halve them lengthwise.
- 10. Remove the seeds and white membranes from the peppers.
- 11. Cut the pepper vegetables into thin strips.
- 12. Slice the cooled potatoes, still with the skin, into rounds about 5 mm thick.
- 13. Fry the potato slices in the remaining chorizo fat for about 5 minutes until golden brown.
- 14. Turn the potatoes while frying so that both sides become golden brown.
- 15. Add the chorizo and pepper strips to the fried potatoes in the pan.
- 16. Heat the mixture briefly until everything is warm.
- 17. Heat a second pan with a little oil.
- 18. Fry the quail eggs in the second pan as sunny-side-up eggs (eggs fried from the bottom without flipping).
- 19. Portion the fried potato mixture onto plates.
- 20. Place the fried quail eggs on top of the potatoes.
- 21. Garnish the dish with fresh parsley leaves.
- 22. Season with freshly ground pepper to taste.
