  7. 7. Preheat the oven to 220 degrees Celsius with top and bottom heat.
  8. 8. Rinse the steaks briefly under cold water.
  9. 9. Pat the steaks dry with a kitchen towel.
  10. 10. Season the steaks with salt and pepper.
  11. 11. Heat oil in a separate pan.
  12. 12. Sear the steaks for 1 to 2 minutes on each side.
  13. 13. Place the seared steaks into small, slightly preheated cast-iron pans.
