  1. 1. Mix sherry and orange juice in a bowl. Pour the liquid over the dates and let them soak for 20 minutes.
  2. 2. Cut the ham into halves or thirds depending on size. Wrap one date in a piece of ham and secure it with a toothpick.
  3. 3. Fry the dates in a pan over medium heat on all sides. Pour the sherry-orange mixture in and quickly reduce the liquid. Remove the pan from the heat and let the dates cool down.
