🍰 Soaked Date Snails

Ingredients
- 400 g dried dates
- 10 g ginger
- 1 pinch cinnamon
- 125 ml lukewarm milk
- 2 tbsp sugar
- 0.5 cube fresh yeast (21 g)
- 250 g flour
- 3 tbsp liquid butter
- 1 egg
- flour (for the work surface)
- 1 egg yolk
- 2 whipping cream
Instructions
- 1. Cover the dates with cold water.
- 2. Let the dates soak for about 12 hours.
- 3. Drain the soaking water the next day.
- 4. Reserve a small amount of the water in a glass.
- 5. Pat the dates dry with a kitchen towel.
- 6. Place the dates in a blender.
- 7. Peel the ginger.
- 8. Chop the ginger roughly.
- 9. Add the ginger to the blender.
- 10. Add the cinnamon to the blender.
- 11. Puree the mixture until smooth.
- 12. Add a little of the reserved water if needed.
- 13. Stir the milk with one tablespoon of sugar.
- 14. Crumble the yeast into the milk.
- 15. Put the flour into a large bowl.
- 16. Add the butter to the bowl.
- 17. Add the remaining sugar to the bowl.
- 18. Crack the egg into the bowl.
- 19. Pour the yeast milk into the bowl.
- 20. Knead the dough with an electric hand mixer.
- 21. Knead until the dough is smooth.
- 22. Cover the dough.
- 23. Let the dough rise in a warm place.
- 24. Wait for about one hour.
- 25. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 26. Sprinkle some flour on the work surface.
- 27. Knead the dough briefly.
- 28. Roll the dough into a rectangle.
- 29. The rectangle should be about 25 by 35 centimeters.
- 30. Spread the date paste over the dough.
- 31. Roll the dough up from the long side.
- 32. Cut the dough into slices about 1 centimeter thick.
- 33. Line a baking sheet with baking paper.
- 34. Place the dough pieces on the tray.
- 35. Whisk the egg yolk with the cream.
- 36. Brush the dough pieces with the egg yolk and cream mixture.
- 37. Bake the snails in the preheated oven.
- 38. Bake them for about 25 minutes.
- 39. Remove the snails from the oven when they are golden brown.
- 40. Let the snails cool down.
- 41. Serve the snails with tea or coffee.
