  1. 1. Mix the flour with the baking powder in a bowl.
  2. 2. Add the cold butter cubes and the full cane sugar.
  3. 3. Cut the vanilla pod lengthwise.
  4. 4. Scrape out the seeds and add them to the bowl.
  5. 5. Add the eggs to the flour mixture.
  6. 6. Process everything with the dough hooks of a hand mixer into a shortcrust pastry.
  7. 7. Shape the dough into a ball.
  8. 8. Place the dough in the refrigerator for 30 minutes.
  9. 9. Rinse the lemon under hot water.
  10. 10. Pat the lemon dry.
  11. 11. Grate the zest of the lemon.
  12. 12. Squeeze the juice of the lemon.
  13. 13. Peel the apples.
  14. 14. Cut the apples into quarters.
  15. 15. Remove the core from the apple quarters.
  16. 16. Slice the apple quarters into thin wedges.
  17. 17. Toss the apple wedges with the lemon zest.
  18. 18. Add 2 tablespoons of lemon juice to the apple mixture.
  19. 19. Sprinkle cinnamon over the apple wedges.
  20. 20. Add maple syrup to the apple mixture.
  21. 21. Roll out the dough.
  22. 22. Place the dough on a baking sheet lined with baking paper.
  23. 23. Arrange the apple wedges in rows on the dough.
  24. 24. Preheat the oven to 180 °C (fan: 160 °C; gas: setting 2–3).
  25. 25. Bake the cake for about 40 minutes.
