🍰 Danish Apple Cake

Ingredients
- 300 g spelt flour Type 1050
- 400 g spelt wholemeal flour
- 2 tsp baking powder
- 300 g butter
- 120 g demerara sugar
- 1 vanilla pod
- 3 eggs (size M)
- 1 organic lemon
- 1250 g tart apples
- 1 tsp cinnamon
- 2 tbsp maple syrup
Instructions
- 1. Mix the flour with the baking powder in a bowl.
- 2. Add the cold butter cubes and the full cane sugar.
- 3. Cut the vanilla pod lengthwise.
- 4. Scrape out the seeds and add them to the bowl.
- 5. Add the eggs to the flour mixture.
- 6. Process everything with the dough hooks of a hand mixer into a shortcrust pastry.
- 7. Shape the dough into a ball.
- 8. Place the dough in the refrigerator for 30 minutes.
- 9. Rinse the lemon under hot water.
- 10. Pat the lemon dry.
- 11. Grate the zest of the lemon.
- 12. Squeeze the juice of the lemon.
- 13. Peel the apples.
- 14. Cut the apples into quarters.
- 15. Remove the core from the apple quarters.
- 16. Slice the apple quarters into thin wedges.
- 17. Toss the apple wedges with the lemon zest.
- 18. Add 2 tablespoons of lemon juice to the apple mixture.
- 19. Sprinkle cinnamon over the apple wedges.
- 20. Add maple syrup to the apple mixture.
- 21. Roll out the dough.
- 22. Place the dough on a baking sheet lined with baking paper.
- 23. Arrange the apple wedges in rows on the dough.
- 24. Preheat the oven to 180 °C (fan: 160 °C; gas: setting 2–3).
- 25. Bake the cake for about 40 minutes.
