🍽️ Oven Chicken with Curry Spice and Zucchini-Date Couscous

Ingredients
- 2 cloves garlic
- 1 piece ginger (approx. 3 cm)
- 2 tbsp sesame oil (and oil for the pan)
- 2 tbsp curry powder
- salt
- pepper (from the mill)
- 2 whole chickens (approx. 1 kg each)
- 1 zucchini
- 150 g dried dates
- 1 tbsp butter
- 200 g couscous
- cayenne pepper
- 1 dash lemon juice
Instructions
- 1. Preheat the oven to 175 degrees Celsius with top and bottom heat.
- 2. Peel the garlic clove and the piece of ginger.
- 3. Chop the garlic and ginger very finely.
- 4. Fry the finely chopped vegetables briefly in hot oil.
- 5. Remove the fried vegetables from the pan and set them aside.
- 6. Stir the curry powder, salt, and pepper into the hot pan.
- 7. Rinse the chicken meat under running water.
- 8. Pat the chicken dry with a kitchen towel.
- 9. Rub the chicken meat thoroughly with the spice mixture.
- 10. Grease a baking dish with some fat.
- 11. Place the seasoned chicken into the prepared dish.
- 12. Bake the chicken in the oven for about 60 minutes.
- 13. Wash the zucchini under running water.
- 14. Cut off the hard ends of the zucchini.
- 15. Cut the zucchini into small cubes.
- 16. Remove the pits from the dates.
- 17. Cut the pitted dates into cubes as well.
- 18. Heat butter in a pot.
- 19. Sauté the zucchini cubes in the hot butter.
- 20. Pour 400 milliliters of water over the zucchini cubes.
- 21. Sprinkle the couscous into the pan.
- 22. Bring the mixture to a boil.
- 23. Remove the pot from the heat.
- 24. Let the couscous swell until the liquid is absorbed.
- 25. Stir the date cubes into the couscous mixture.
- 26. Season the couscous with salt.
- 27. Season the couscous with pepper.
- 28. Add some lemon juice to the couscous.
- 29. Place the baked chicken on a plate.
- 30. Place the zucchini-date couscous next to the chicken.
