🍽️ Creamy Curry Cabbage with Peanuts

Ingredients
- 1 small head white cabbage (approx. 1,2 kg)
- 1 onion
- 3 tsp rapeseed oil
- 1 tbsp curry powder
- 400 g chunky tomatoes (can)
- 250 ml vegetable broth
- 100 g peanuts
- salt
- pepper (from the mill)
- 1 tbsp freshly chopped parsley
Instructions
- 1. Wash the white cabbage and cut it into four equal quarters.
- 2. Remove the tough outer leaves and the hard central core.
- 3. Slice the remaining cabbage pieces into thin strips.
- 4. Peel the onion and cut it into small cubes.
- 5. Heat the oil in a large pan or pot.
- 6. Add the onion cubes to the hot oil.
- 7. Sauté the onions until they are soft and translucent.
- 8. Add the sliced cabbage strips to the onions.
- 9. Fry the cabbage briefly until it starts to soften.
- 10. Sprinkle the curry powder over the vegetables.
- 11. Add the tomatoes along with their juice to the pan.
- 12. Pour in the vegetable broth.
- 13. Stir in the peanuts.
- 14. Let the mixture simmer on low heat for 30 minutes.
- 15. Season the dish to taste with salt and pepper.
- 16. Serve the cabbage garnished with fresh parsley.
