🍽️ Indian-style Cod Curry

Ingredients
- 700 g halibut (ready for cooking, skinless)
- salt
- pepper (from a mill)
- 2 tbsp lemon juice
- 2 onions
- 6 tomatoes
- 2 tbsp oil
- 1 pinch turmeric
- 1 tsp ground coriander
- 1 pinch chili powder
- 4 tbsp chopped coriander
- Garam Masala (Indian spice mix from the Asian grocery store)
Instructions
- 1. Rinse the fish under cold water.
- 2. Pat the fillet dry with a kitchen towel.
- 3. Cut the fillet into bite-sized pieces.
- 4. Season the fish pieces with salt and pepper.
- 5. Drizzle the fish with some lemon juice.
- 6. Set the seasoned fish aside.
- 7. Peel the onions.
- 8. Chop the onions very finely.
- 9. Score the tomatoes crosswise at the bottom.
- 10. Pour boiling water over the tomatoes briefly.
- 11. Shock the tomatoes under cold water to loosen the skin.
- 12. Remove the skin and the hard stem base from the tomatoes.
- 13. Dice the tomato flesh roughly.
- 14. Heat the oil in a large pan.
- 15. Sauté the onions for 2 minutes until soft.
- 16. Stir in turmeric, ground coriander, and chili powder.
- 17. Sauté the spices briefly until fragrant.
- 18. Add the fish to the pan.
- 19. Mix in the tomato cubes.
- 20. Cook everything for approx. 3 minutes.
- 21. Sprinkle the curry with half of the fresh coriander or parsley leaves.
- 22. Sprinkle the curry with some Garam Masala (an Indian spice blend).
- 23. Let the curry simmer covered for 8 to 10 minutes.
- 24. Sprinkle the finished curry with the remaining fresh coriander.
- 25. Serve the curry hot.
