🍽️ Colorful Beef Curry with Pineapple

Ingredients
- 600 g beef (e.g. top round)
- 2 tbsp peanut oil
- 250 g pineapple flesh
- 2 tbsp green curry paste
- 250 ml meat broth
- 300 ml coconut milk
- fish sauce
- salt
- 200 g snow peas
- 2 red bell peppers
- 200 g broccoli florets
- 1 handful bean sprouts
- 1 squeeze lime juice
- soy sauce
Instructions
- 1. Rinse the meat under cold water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Cut the meat into small, bite-sized cubes.
- 4. Heat oil in a pan or wok.
- 5. Sear the meat cubes until they are brown.
- 6. Remove the meat from the pan and set it aside.
- 7. Dice the pineapple into small cubes.
- 8. Fry the pineapple cubes for 1 to 2 minutes in the remaining oil.
- 9. Add the meat back into the pan.
- 10. Roast the curry paste briefly to release the flavors.
- 11. Deglaze the dish with beef broth and coconut milk.
- 12. Season with fish sauce and salt.
- 13. Let the mixture simmer gently for about 30 minutes, stirring occasionally.
- 14. Add a little more broth if necessary.
- 15. Wash the snow peas under running water.
- 16. Remove the tough strings from the snow peas.
- 17. Wash the bell peppers.
- 18. Halve the bell peppers.
- 19. Remove the inner core with the seeds.
- 20. Cut the bell peppers into thin strips.
- 21. Rinse the broccoli under running water.
- 22. Rinse the sprouts under running water.
- 23. Add the prepared vegetables to the curry.
- 24. Let everything simmer together gently for 5 to 10 minutes.
- 25. Check if the vegetables are cooked through.
- 26. Adjust the final seasoning of the curry with lime juice.
- 27. Season finally with fish sauce and soy sauce.
- 28. Serve the curry hot.
